Our worship service this morning was titled, “Salt of the Earth”. The description was: “Salt and saltiness have long served as metaphors for religious people. This morning, we’ll explore a few of the stories and lessons related to living a life of flavor.”
I love that phrase - “living a life of flavor”. I’m going to talk much more prosaically about flavor. And in particular, salt. Just a few weeks ago, my daughter texted me a question about the type of kosher salt she had purchased, and why it was so different from her previous brand. I sent her a helpful (I hope) article from Serious Eats called “A Guide to Salt, The World’s Most Popular Food.” The article starts out with a great quote from Pliny the Elder: “Heaven knows, a civilized life is impossible without salt.”
I keep 3 kinds of salt on hand at all times. Most often, I reach for kosher (Diamond Crystal), but I also have a fine sea salt, and Fleur de Sel to use as a finishing salt. I’ve tried any number of flavored and smoked salts, but realized I would rather season things to my taste, not relying on “pre-flavored” salts.
So.
Use good salt.
Stay away from anti-caking ingredients.
Live a life of flavor.
